Milk Chocolate Ice Cream

On the way to Waterton, there is an oft-visited gas station (a Husky, I believe) located on the highway in Cardston. They used to serve these LOVELY soft-serve malts that just hit the spot! When making this recipe, I worked hard to replicate that flavor. The result is an ice cream made with Dutch-process cocoa (an alkalized cocoa) featuring notes of cinnamon and allspice. It is a very smooth, gentle chocolate that is universally liked. It's not a strong chocolate, but it is a very rounded, enjoyable flavor.

Fresh milk, fresh cream, skim milk powder, white sugar, dextrose (corn sugar), salt, egg yolks, coconut oil, xanthan gum, guar gum, Madagascar vanilla, Dutch-process cocoa, cinnamon, allspice, instant coffee
